happy new year 2009!

I'm realizing how little I actually post on here...
One of these days I will post more regularly. :) Until then, here's a yummy recipe I found by Diana Faulds and then made some changes... It happened on one of those days I felt I had NOTHING in my fridge and no inspiration... so I googled beef stir fry and found this.

Curry Beef Stir-Fry

INGREDIENTS
• 1 tbsp cornstarch
• 1 tbsp reduced-sodium soy sauce
• 4 tbsps cold water, divided
• 2 tbsps vegetable oil, divided (I used olive oil)
• 8-16 oz boneless sirloin steak, cut into thin strips (I used hamburger meet from my freezer)
• 1 garlic clove, minced
• 1/2 teaspoon ground ginger
• 1 small onion, cut into 1/2-inch wedges or slices
• 1 cup sliced celery
• 1 medium green pepper, cut into 1-inch pieces (I used red pepper)
• 2 medium tomatoes, cut into 1/2-inch wedges
• 1 cup Baby carrots sliced the long way (optional)
•SAUCE:
• 1 tbsp cornstarch
• 5 tbsps cold water
• 2 tbsps ketchup (I have used salsa or spaghetti sauce - I didn't have ketchup)
• 1 tbsp reduced-sodium soy sauce
• 1/2 - 1 tsp curry powder
• Hot cooked rice
DIRECTIONS
• In a large bowl, combine cornstarch, soy sauce, 1/2 water and 1/2 oil until smooth; add beef and toss to coat. (this works as a "marinade")
• In a large skillet or wok, stir-fry beef, garlic and ginger in remaining oil until meat reaches desired doneness. Remove meat with a slotted spoon and keep warm. Add the onion, celery, green pepper and remaining water to the skillet. Cover and cook for 2 minutes. Add tomatoes and beef.
• SAUCE: In separate bowl combine the cornstarch, water, ketchup, soy sauce and curry until smooth; add to the skillet. Bring to a boil; cook and stir for 2 minutes. Serve over rice.

FOOTNOTE: Nutritional Analysis: One serving (calculated without rice) equals 205 calories, 9 g fat (0 saturated fat), 51 mg cholesterol, 453 mg sodium, 12 g carbohydrate, 0 fiber, 19 g protein. Diabetic Exchanges: 2 meat, 2 vegetable.
