visitors...

monday evening i had the pleasure of having a visitor :)
jacquie came to visit and it was wonderful to have her over for dinner.
besides rachael's wedding... (update on this at a later date) i hadn't seen her since august.
we had the opportunity to talk about life, work, family, friends, etc...
it was relaxing and so nice to spend a little time w/her.
would gladly do it again sometime... ;)

below... i made my mom's chicken fajitas recipe - only they weren't fajitas... either way, they are delicious and i recommend you try it out! i promise, you won't be disappointed!


Maria MacDonald's Chicken Fajitas

1 lb. chicken breast
1 can 8 oz pineapple chunks
1/2 - 1 red or green bell pepper
1/2 - 1 small onion
1 - 3 tbsp of your favorite salsa (depends on taste)
2-4 tbsp sour cream (depends on taste)
1 packet fajita seasoning mix (1.25 oz)
1 bag soft taco flour tortillas (optional)
12 oz grated Monterey jack cheese (can use less, this cheese is my preference)


  1. Dice onion & pepper - sauté for a few minutes in olive oil
  2. Cut chicken into bite size pieces and add to the veggie mix in the frying pan
  3. Fry/sauté above ingredients until chicken starts to look cooked
  4. Add pineapple chunks AND the juice (juice is key factor)
  5. Add fajita mix and let everything simmer for a few minutes
  6. Stir in salsa and sour cream - let cook for a few minutes
  7. Remove stir fry pan from heat and serve over rice and top w/grated Monterey jack cheese - maybe a salad on the side... delish!
OR to turn them into fajitas...
  1. Pull out 9x13 baking pan, spray w/PAM or equivalent
  2. Put a few spoonfuls of fajita mix in a tortilla and roll it up
  3. Place filled tortillas in baking pan
  4. Cover the tortillas w/shredded cheese
  5. Bake in oven at 375 F for about 30 minutes or until the cheese is bubbly
  6. Serve with green salad and olives if so inclined
Eat until your tummy is content!!

vacation: new hampshire

well, after martha's vineyard and time with my family - we headed back to the north shore, packed our things and headed for the mountains. we took a trip to lincoln, nh. no, not north conway, and not the outlet shopping... we headed on a hiking trip. we packed our backpacks and hiked up to mt. moosilauke. part of the way up the hike we pitched our tent and dropped our gear. we hiked to the top of mt. moosilauke and then back down to our campsite. we feasted on lasagna for dinner and hit the sack. the next morning, caleb tried out his french press and enjoyed a cup of steaming coffee. i had yummy instant oatmeal.
we hiked back down and enjoyed the beautiful scenery. our vacation was almost over...
